Southwest Veggie Frittata and Go! Guava Super Smoothie

Southwest Veggie Frittata
1/2 jalapeño pepper, seeded (optional)
1/3 small onion
1/4 medium tomato or 1/4 cup grape tomatoes
3 eggs
2 Tbsp. Water
3/4 tsp Simple Indulgence Southwest Chipotle Seasoning
1/4 cup of shredded pepper jack cheese (or Daiya cheese if you don’t eat dairy)

Combine jalapeño, onions bad Southwest Chipotle Seasoning in the QuickChef Pro fitted with the blade. Turn handle until diced.
Add tomato and turn 1-2 times.
Take out blade and put in paddle attachment. Add eggs and water and blend until combined.
Pour into Breakfast Maker and sprinkle with cheese. Microwave on high 2 minutes & 15 seconds.

Try with other veggies or different cheese.

Go! Guava Super Smoothie
2 oz Guava paste
1 cup guava nectar
6 oz frozen strawberries
1/4 cup plain yogurt

In QuickChef Pro bowl fitted with the blade, combine guava paste, guava nectar. Turn handle unilateral blended.
Add the rest of the ingredients and turn handle until smooth.

I have tried the frittata but not the smoothie. Does anyone know where to get guava paste or nectar? (Comment below). I’ve done other smoothies though that turned out great!

Hot chocolate!

I don’t know about where you are but here in WA State it is definitely FALL! It is super chilly and the spouse and I are trying to hold off turning on the heat to try and save some $$$!! So, hot cocoa for everyone (well, except those drinking coffee)! Here’s ywhat we did….

Hot Cocoa
2 cups of milk (I used coconut milk because it is luscious, it is what I had, and dairy gives my husband tummy aches)
6 tsp of cocoa powder (split between 2 mugs)
4 tablespoons sugar (of some kind…I used honey because it makes it interesting and is more natural…also split between 2 mugs)
2 dashes of salt (1 in each mug)

Put the sugar, cocoa powder, and salt in the mugs. Heat the milk in the Micro Pitcher in the microwave (it took my microwave 2 minutes).

Pour milk into mugs and stir. If you want to get it really incorporated….put it Ina QuickShake and SHAKE SHAKE SHAKE! Then pour into the mugs!

Chocolate cake in the microwave?!?!?

I was craving some chocolate so I decided to do what all Tupperware consultants…I made a cake in less than 20 minutes in the microwave! Follow the following recipe!

Skinny Chocolate Cake
3 eggs whites
1/3 cup fat free mayo
1 cup of water
1 chocolate cake mix (I made mine with gluten free chocolate cake mix because my husband is gluten sensitivity)

Mix wet ingredients together. Add cake mix and mix until thoroughly incorporated. Pour into the 3 quart Stack Cooker casserole with the cone in the middle. Put on the lid on and microwave on high for 9 – 12 minutes (start with 9….particularly if the wattage on your microwave is high). Let stand for 10 minutes (only if you care about it being pretty…otherwise dig in!). Turn it out on. Cake Taker!

Pumpkin Spice Cake with Cream Cheese Frosting

I did this recipe today at two different parties….was a major hit!!!

Pumpkin Spice Cake

1 boxed spice cake mix
15 oz of canned pumpkin
3 eggs

Put eggs and pumpkin in Power Chef System. Pull cord 4-5 times. Add half of the cake mix. Pull cord until incorporated. Add the rest of the cake mix and pull cord until incorporated.
Transfer batter to the 3 quart Stack Cooker casserole with cone inserted. Bake in the microwave for 9-12 minutes (depending on the wattage of the microwave). Let cake rest for 10 minutes before transferring to Round Cake Taker!

Cream Cheese Frosting
2 cups of powdered sugar
3 oz of cream cheese (softened)
1 teaspoon vanilla
6 tablespoons of butter (softened)
1 tablespoon of milk

Combine cream cheese, butter, vanilla, milk in Power Chef System until we’ll incorporated. Add powdered sugar a little at a time. If you are running late or just don’t want to have to decorate it….add more milk to make it a drizzle instead and make it look pretty by spreading nuts on the the top (chopped in the Chop N Prep).

Homemade fish sticks, Tarter Sauce, with Sautéed Zucchini

This seems like such a classic family dinner but what with one of my family gluten and dairy intolerant…..pre-made food isn’t really as possible. Thus, homemade everything.

Fish sticks
2 lbs of Cod, Rock Cod, or other white flaky fish
Almond milk
Corn meal
GF breadcrumbs (I save the heals in a Freezer Mate, toast bread in the oven, crumble-fy it in the Power Chef, and store in a Modular Mate Oval 1)

Cut fish into strips. Soak in almond milk. Then in the Smart Prep System, I put in half breadcrumbs and half cornmeal with a little salt an pepper. Stick in the fish, Shake Shake Shake!!! Then I pop it on a baking sheet or the lid of an UltraPro casserole and bake on 400 degrees for 12 minutes. Easy peasy and delicious!

Tarter Sauce
This is the recipe I used basically. To Tupperize it, I prepped the onion in the Chop and Prep and then blended in all together in the Power Chef with the blending blade attached. Way more tasty than store bought AND no scary ingredients!!!

Sautéed Zucchni
I’m not sure this is a recipe but we did eat it with our fish….all you do is diced zucchini and sauté in coconut oil, salt, pepper, AND that’s it!

In conclusion, dinner was delicious and really for completely homemade (minus not making the mayo or relish…) it was super quick and easy!!!
